I found this basic recipe on the Cool-whip label. I decided it would be fun to change it to one-bite amuse-bouches (French for "Amuse your mouth")
Mix 1/2 cup granulated sugar with 8 oz softened cream cheese. Blend together well. Add in 2 cups whipped topping.
To make the cheesecake normally I would put this into a prepared graham cracker crust (actually it would make 2 or one deep one) and top with a can of pie filling. Cherry is my favorite. Cheese cake should chill for 4 hours to cut easily.
for the Amuse-Bouches, I took the mini-cupcake wrappers and put a vanilla wafer in the bottom, a dollop of cheesecake mix on the cookie and a spoonful of pie topping on top of that. Perfect one bite! These can be chilled (better for transport) or served immediately. Makes 2-3 dozen
